In Wyoming, fall is quite the busy time of year for a large number of our residents — because it’s hunting season. Sportsmen organize, tune up their bows, guns, and other gear to harvest large & small game, upland & migratory birds that are native to the region. Elk, mule deer, Bighorn sheep, mountain goat, antelope, pheasant, grouse, turkey, and in some areas, bison, are among the coveted wild game species that bring hunters, near and far, to Wyoming for the fall harvest season.
Once the hard work of the harvest is done and the freezer is full, the labor of love is not yet over. Cooking is the next task at hand. This month, we want to share a selection of backcountry recipes for many of the home-grown game species that fill freezers across Wyoming.
