Ten Recipes That Represent Wyoming

If you want a taste of Wyoming, try out one of the following ten recipes. Enjoy a stick-to-your-ribs meal, hearty appetizers or cookies as big as your hand.

Stick to Your Ribs Meals

Wyoming Stew
1 pound cubed beef
2 tsp meat tenderizer
14.5 oz can chicken broth
10.75 can cream of chicken soup
1 envelop dry onion soup mix
16 oz package frozen vegetables
1 package crescent rolls

Heat a cast-iron skillet over medium-high heat. Sprinkle meat tenderizer over beef cubes, and cook in the hot skillet until browned. Drain off any excess juice.
In a small bowl, mix chicken broth, cream of chicken soup and onion soup mix. Pour over meat, reduce heat to low, and simmer for 45 minutes.
Preheat the oven to 350. Add the frozen stew vegetables to the skillet, and simmer for ten more minutes. Unroll crescent roll dough, and arrange to cover the top of the pan (like a pie).
Bake for 10 to 15 minutes in the preheated oven, or until the top is golden brown. Remove and serve.

Wyoming Casserole
1 lb. ground beef
1 small onion, chopped
1 (1 3/4 oz.) pkg. taco seasoning mix
1/4 tsp. salt
1 c. water
1 (10 oz.) pkg. frozen chopped spinach
4 oz. diced cooked ham
1 c. sour cream
1 to 2 c. shredded Monterey Jack cheese
10 tortillas

Heat oven to 350
Brown beef and onion. Drain fat. Stir in taco mix, salt, and water. Add spinach and ham. Cover and cook until spinach thaws, break with a fork. Simmer, cover five minutes. Warm tortillas and spoon mixture evenly into each. Roll up and place seam side down in greased 13x9x2 inch baking dish.
Cover and bake for 30-35 minutes. Uncover and spread sour cream over tortillas and sprinkle with cheese. Cover again and put it back in the oven for 5-10 minutes or until cheese melts. Use taco sauce to taste.

Wyoming Cowboy Favorite
2 cans of white Northern beans, undrained
1 c. diced ham
1 sm. onion, chopped

Mix ingredients. Simmer until hot. An easy and delicious meal!

Wyoming Style Spareribs
1/2 c. butter
1 med. clove garlic, finely chopped
1 envelope Dry Onion Soup Mix
1 can (16 oz.) tomato puree
1/4 c. soy sauce
1/2 c. brown sugar
1/4 c. white vinegar
1/4 c. chili sauce
5 lbs. spareribs, country-style or back ribs

Preheat oven to 375.
In a large saucepan, melt butter and cook garlic with onion recipe soup mix until garlic is golden. Stir in remaining ingredients except spareribs. Bring to a boil. Simmer for 15 minutes. Stir occasionally.
While sauce simmers, arrange spareribs, meat side up on a large aluminum foil-lined baking pan or broiler rack. Bake 20 minutes. Brush spareribs liberally with sauce, continue baking, brushing occasionally with remaining sauce. Bake 50 minutes or until spareribs are done.

Wyoming Enchilada Casserole
1 1/2 lbs. ground beef
1 small onion, chopped
1 clove minced garlic
1 1/2 c. picante sauce (with extra for dipping)
1 (8 oz.) can tomato sauce
2 medium tomatoes, seeded and chopped
1 (10 oz.) pkg. frozen chopped spinach, thawed and squeezed dry
1 red bell pepper, diced
1 tbsp. lime juice
1 1/2 tsp. salt (optional)
12 corn tortillas
1 c. sour cream
3/4 c. shredded Monterey Jack cheese
3/4 c. shredded Cheddar cheese
Shredded lettuce (optional)
1/2 c. sliced ripe olives

Heat oven to 350.
Brown meat with onion and garlic; drain. Add picante sauce, spinach, tomato sauce, tomatoes, bell pepper, lime juice and salt. Simmer uncovered for 15 minutes. Stir occasionally. Arrange 6 tortillas on bottom and up the sides of a lightly greased 13x9x2 inch baking dish, overlapping as necessary. Top with half the meat mixture.
Arrange remaining tortillas over the top, overlapping as necessary. Spread sour cream evenly over tortillas. Top with remaining meat mixture.
Bake about 30 minutes or until hot and bubbly. Remove from oven; sprinkle with cheese. Let stand 10 minutes or more so the meal can set. Cut into squares to serve. Garnish with lettuce and olives. Serve with picante sauce. Makes 8 servings.

Appetizers

Wyoming Sausage Cheese Balls
Heat oven to 325
1 lb. hot sausage
3 c. Bisquick
1 lb. Velveeta cheese, melted

Mix ingredients until smooth. Form into bite-sized balls. Place on cookie sheet. Bake at 325 for 20 to 30 minutes. Freeze any extras.

Wyoming Basque Potatoes
1 medium onion, chopped
1 clove of crushed garlic
2 tbsp. olive oil
3/4 c. chopped parsley
1/4 c. chopped pimento
1 tsp. salt
1/8 tsp. pepper
1 tsp. granulated chicken broth
1 c. water
6 med. potatoes (about three pounds)

Fry onion and garlic in olive oil until soft, stir in parsley, pimento, salt, pepper, chicken broth and water. Remove from heat.
Pare potatoes (if desired, leave skin on) and slice thin. Layer potatoes in the broth in a medium size skillet. Heat to boiling. Reduce heat, cover, simmer about 20 minutes or until tender.
Remove potatoes with a slotted spoon to a heated serving dish. Spoon remaining cooking liquid over potatoes.

Sweet Treats

Wyoming Cookies
1 c. butter
1 c. peanut butter
1 c. brown sugar
1/2 c. sugar
3 eggs
3 tsp. vanilla
2 c. flour
2 tsp. baking powder
2 c. dry oats
1 12-oz. pkg. chocolate chips

Preheat oven to 350. Grease cookie sheets.
In a large mixing bowl, cream together butter, peanut butter, brown sugar, and sugar. Add in eggs and vanilla, and beat mixture until light and fluffy.
Sift flour and baking powder. Add to creamed mixture and blend well. Stir in oats and chocolate chips. (If desired, add coconut, raisins, or peanuts.)

Wyoming Dump Cake
2 eggs, beaten
2 c. sugar
1 tsp. soda
Pinch salt
1 c. raisins
1 c. oil
2 c. flour
1 1/2 tsp. cinnamon
1 tsp. vanilla
1 c. nuts
1 (21 oz.) can apple pie filling

Heat oven to 350
Combine all ingredients, except pie filling, in large bowl and beat well. Fold in apple pie filling and pour into greased, floured 9×13 inch pan. Bake at 350 for 50 minutes (moister) or 60 minutes (dryer). Let cake cool.
To make frosting: 3/4 cup powdered sugar. Mix with lemon juice and 1 tbs. to spreading consistency. Frost cake when it’s cool. Cut cake into 18 to 24 servings.

Wyoming Whoppers
2/3 c. butter
1 1/4 c. brown sugar
1 1/2 c. chunky peanut butter
2 tsp. baking soda
1 (12 oz.) pkg. chocolate chips
3 eggs, slightly beaten
3/4 c. granulated sugar
6 c. old-fashioned oats
1 1/2 c. raisins

Heat oven to 350. Grease cookie sheets.
Melt butter. Blend in sugar, eggs and peanut butter. Mix well. Add oats, soda, raisins, chocolate chips. Mixture will be sticky. Drop onto greased cookie sheets with a large spoon. Flatten slightly.
Bake at 350 degrees for about 15 minutes (3-inch cookie). Allow to cool a bit before removing to a cooling rack. Makes about 2 dozen cookies. For chewy cookies, bake at 300 degrees.

    Wyoming recipes with no elk or deer? never heard of it.

      Hi Kathy,
      You can always switch out the beef for elk or deer meat! I bet it’s just as good!
